This recipe is a great way of using leftover meat and veg from a roast dinner and is one of my favourite egg recipes. It uses flour which isn’t very healthy however there is only a little and it eliminates the use of pastry. You could even experiment with using wholemeal flour to make it healthier.
Preheat the oven to 200 degrees Celsius (or around 390 degrees Fahrenheit).
I’m not going to be specific with ingredients but all you need is a baking dish about the size of the one in the photo filled with leftover vegetables and meat. All you need to do then is mix these ingredients and pour them in so that they spread around the dish:
- 1/4 cup of self-raising flour (or 1/4 cup of plain flour and 1tsp baking powder)
- 1/2 cup of milk
- 3 eggs
Season it and if you wish you could add some grated cheese – but beware this isn’t a healthy ingredient and is quite calorific. To calculate the nutritional content use this online calculator
I recommend that you serve the quiche with coleslaw.
